About the Recipe
A simple, fragrant veggie curry that’s perfect for weeknights and requires minimal ingredients.

Ingredients
1 tbsp oil
1 onion, sliced
1 cup mixed vegetables (carrots, peppers, broccoli)
1 tbsp curry paste or powder
1 can coconut milk
Salt to taste
Cooked rice (to serve)
Preparation
Heat oil in a pan and sauté the onion for 2–3 minutes.
Add the mixed vegetables and stir-fry for 3 minutes.
Stir in the curry paste or powder.
Pour in the coconut milk and bring to a simmer.
Cook for 10 minutes until vegetables are soft.
Season and serve over rice.
