About the Recipe

A simple, fragrant veggie curry that’s perfect for weeknights and requires minimal ingredients.

Ingredients

  • 1 tbsp oil

  • 1 onion, sliced

  • 1 cup mixed vegetables (carrots, peppers, broccoli)

  • 1 tbsp curry paste or powder

  • 1 can coconut milk

  • Salt to taste

  • Cooked rice (to serve)

Preparation

  1. Heat oil in a pan and sauté the onion for 2–3 minutes.

  2. Add the mixed vegetables and stir-fry for 3 minutes.

  3. Stir in the curry paste or powder.

  4. Pour in the coconut milk and bring to a simmer.

  5. Cook for 10 minutes until vegetables are soft.

  6. Season and serve over rice.
