About the Recipe

The lemon drizzle cake is bright, zesty, and teaches you how to make a moist sponge with a simple syrup glaze.

Ingredients

  • 1 cup flour

  • ½ cup sugar

  • 1 tsp baking powder

  • 2 eggs

  • ½ cup butter, melted

  • Juice & zest of 1 lemon

  • 2 tbsp sugar (for drizzle)

Preparation

  1. Preheat the oven to 180°C.

  2. Mix the flour, sugar, and baking powder together.

  3. Add the eggs, melted butter, lemon zest, and juice.

  4. Stir until just combined.

  5. Pour into a loaf tin and bake for 30–35 minutes.

  6. Mix 2 tbsp sugar with extra lemon juice to make a syrup.

  7. Pour the syrup over the warm cake.

  8. Let cool before slicing.
