The lemon drizzle cake is bright, zesty, and teaches you how to make a moist sponge with a simple syrup glaze.

Ingredients
1 cup flour
½ cup sugar
1 tsp baking powder
2 eggs
½ cup butter, melted
Juice & zest of 1 lemon
2 tbsp sugar (for drizzle)
Preparation
Preheat the oven to 180°C.
Mix the flour, sugar, and baking powder together.
Add the eggs, melted butter, lemon zest, and juice.
Stir until just combined.
Pour into a loaf tin and bake for 30–35 minutes.
Mix 2 tbsp sugar with extra lemon juice to make a syrup.
Pour the syrup over the warm cake.
Let cool before slicing.
