Mini chicken quesadillas are quick, crispy, and packed with flavour — perfect for parties or as an afternoon snack.

Ingredients
4 small tortillas
1 cup cooked shredded chicken
½ cup grated cheese
1 tbsp salsa or tomato sauce
½ tsp paprika
Oil for frying
Preparation
Mix the chicken with salsa and paprika.
Place the mixture onto two tortillas and top with cheese.
Cover with the remaining tortillas.
Heat oil in a pan and cook each quesadilla for 2–3 minutes per side until golden.
Cut into triangles and serve.
