About the Recipe
Stuffed bell peppers are colourful, healthy, and a great way to practice prepping, sautéing, and baking together in one recipe.

Ingredients
4 bell peppers
1 cup cooked rice
1 onion, chopped
1 garlic clove
1 cup tomato sauce
½ cup grated cheese
1 tbsp olive oil
Salt & pepper
Preparation
Preheat the oven to 190°C.
Cut the tops off the peppers and remove the seeds.
Sauté the onion and garlic in olive oil until softened.
Stir in the rice and tomato sauce, then season.
Fill the peppers with the mixture and top with cheese.
Place the peppers in a baking dish and cover loosely with foil.
Bake for 25 minutes, then remove foil and bake another 5 minutes.
Serve warm.
