About the Recipe
A quick, protein-packed sandwich filling that’s creamy, flavourful, and perfect for lunch on the go.

Ingredients
1 can chickpeas, drained
2 tbsp vegan mayonnaise
1 tsp lemon juice
1 small celery stalk, chopped
1 tbsp chopped red onion
Salt & pepper
4 slices of bread
Preparation
Mash the chickpeas in a bowl using a fork.
Add vegan mayo, lemon juice, celery, and red onion.
Season with salt and pepper and mix well.
Spread onto bread slices and assemble the sandwiches.
Serve immediately or chill for later.
